Prime Steak Quesadillas
Lower in calories than traditional quesadillas, this recipe bucks the trend by using reduced fat cheese, creamy avocado and wholemeal tortillas. Easy to make, full of healthy fats and totally moreish!
Serves 4
Ingredients
4 wholemeal tortillas
400g braising steak
2 avocados (soft ideally)
2 peppers (thinly sliced)
1 lime (juice only)

1 tablespoon olive oil
Sea salt (to taste)

Method
- Add a dash of oil to a non-stick pan and cook bell peppers until soft and slightly charred. Once cooked, add the juice of 1 lime and mix well.
- Slice steak into thin strips and add to the peppers. Season mixture with salt and pepper and cook steak. Once cooked to desired readiness, set aside.
- In a bowl, add avocado and mush in a bowl.
- Grab a tortilla wrap and spread a spoonful of mushed avocado on half a wrap. Top with steak and pepper mixture and sprinkle with cheese.
- Heat a non-stick pan on a medium heat and add a dash of oil. Once hot, add the loaded tortilla and cook until cheese is melted (placing a lid over pan is a good option). Fold and repeat!
- Enjoy with salsa.
