Guilt-Free Peanut Butter & Orange Chicken
Succulent and tender chicken strips coated in a peanut butter and orange marinade, it’s as good as it sounds! Full of healthy fats, natural protein and amazing flavour combinations, this recipe is also paired with a delightful spinach, kale and goji berry salad. The result, a guilt free meal packed full of nutrients and perfect for the whole family.
Ingredients
Serves 4
The chicken
2 large chicken fillets (cut into strips)
3 tbsp of your favourite nut butter (ours is crunchy)
1 tbsp red chilli paste
1 tbsp low salt soy sauce
1 tbsp honey
1 garlic clove, minced
½ juice from one orange
Season with salt & pepper
For the salad
2 handfuls of kale, chopped
2 handfuls of spinach, chopped
2 tbsp dried Goji berries
1 tbsp rice vinegar
½ juice from one orange
1 carrot, grated
Method
1. Pre heat oven to 200c. Cut chicken into strips (about 4 strips per fillet).
2. In a bowl, combine peanut butter, soy sauce, garlic, chilli paste, half of the orange juice and mix well.
3. Coat each strip and place on a grill plate, cooking for around 15 minutes (or until cooked through).
4. To prepare the salad, wash spinach, kale and roughly chop. Grate carrot and combine the remaining ingredients. Mix well and enjoy this delicious dish!
